I agree with costas.

With ZK 7 it's now very funny to build bootstrap powered responsible web application AND web sites. Take a look here:

Both are Bootstrap/ZK7 powered and are running on mobile device sizes too.

The answer is "it depends":

Appearance: As from ZK 7, you may build very nice mobile web pages with a bootstrap theme. You may also exploit the bootstrap's grid system to make your pages responsive for different screens (phone, tablet). If on the other hand, you need to implement a look & feel like jQuery mobile, then you will find this a little bit hard.

Speed: In general the speed of a ZK mobile app is pretty much the same as if you were using any other server-side framework (vaadin, jsf). Server side frameworks need a decent bandwidth. Some others "native" javascript toolkits (e.g sencha touch) may provide a somehow faster interface but they increase the complexity and the maintenance of your application.

IMHO there is no web app "optimized" for mobile devices that can be compared to native mobile apps written into the platform's language (e.g objective-c). ZK gives you the power to make a true prototype very fast. Make one, give it to your users and evaluate their feedback.
