Hello,
I am considering ZK as the framework of choice for a commercial, closed-source web-project.
I am aware of the fact that this means that I need to purchase a commercial ZK license.
Since ZK requires a JDK for development as well as a JRE in order to run the application on the server, my question is: Do I need to purchase additional Java JDK/JRE licenses from Oracle or is that already covered by the ZK commercial license?

ZK Licenses are for ZK products and libraries.
( As far as I know, both JDK and JRE can be freely redistributed with value-add, but I would suggest you to consult with Oracle. )

Has ZK been tested with the OpenJDK?
I wonder if that would work as flawlessly as with the "normal" JDK.
Yes, it works with OpenJDK flaslessly (in fact I am using OpenJDK here on my development machine by default ;) ).
